For the Chicken:
2 lbs boneless skinless chicken thighs
3 tbsp olive oil
Juice of 1 lemon
4 garlic cloves, minced
1 tsp cumin
1 tsp coriander
1 tsp paprika
½ tsp turmeric
½ tsp cinnamon
½ tsp cayenne or chili powder
Salt and pepper to taste
For the Bowl:
4 cups cauliflower rice
2 cups chopped lettuce or spinach
1 cucumber, diced
1 tomato, diced
¼ red onion, thinly sliced
Pickles (optional)
For the Garlic Sauce:
½ cup mayo
2 garlic cloves, minced
1 tbsp lemon juice
Pinch of salt
(Optional: 1 tbsp Greek yogurt or sour cream)
Marinate Chicken: In a bowl or bag, mix chicken with oil, lemon juice, garlic, and all spices. Let sit for 30 minutes to 8 hours.
Cook Chicken: Heat a skillet over medium-high heat. Cook chicken for 6–8 mins per side until golden and cooked through. Let rest, then slice.
