Ingredients

Scale
  • 2 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder
  • ½ teaspoon Italian seasoning
  • 1 tablespoon olive oil
  • 2 tablespoons balsamic vinegar
  • 2 medium tomatoes, sliced
  • 4 slices fresh mozzarella
  • Fresh basil leaves
  • 1 tablespoon butter
  • 1 teaspoon honey (optional for extra sweetness)

Instructions

  • Prepare the chicken – Butterfly the chicken breasts or pound them slightly for even cooking. Season both sides with salt, pepper, garlic powder, and Italian seasoning.
  • Sear the chicken – Heat olive oil in a skillet over medium-high heat. Cook the chicken for 4-5 minutes per side until golden brown. Remove from pan and set aside.
  • Make the sauce – In the same pan, add butter, balsamic vinegar, and honey. Stir and let it simmer for a minute until slightly thickened.
  • Assemble – Place the chicken back in the skillet. Layer each piece with sliced tomatoes and fresh mozzarella. Cover and cook for 3 minutes until the cheese melts.
  • Finish and serve – Sprinkle fresh basil leaves over the top. Drizzle with extra balsamic glaze if desired. Serve hot with your favorite side dish!

Notes

  • For extra flavor, add a pinch of red pepper flakes to the balsamic glaze.
  • Serving ideas: Pair with roasted veggies, garlic butter pasta, or a fresh salad.
  • Keto-friendly option: Skip the honey for a fully low-carb meal.
  • Leftovers? Use them for sandwiches, pasta, or a salad the next day!
