A rich, creamy cheese ball made with smoked gouda, sharp cheddar, and roasted almonds. It’s low in carbs and full of flavor, great for parties, snacks, or holiday spreads.
Cheese & Base:
8 oz cream cheese (softened)
1 ½ cups shredded smoked gouda
½ cup shredded sharp cheddar
¼ cup sour cream
1 tbsp mayonnaise
Flavor Add-ins:
1 tsp garlic powder
1 tsp onion powder
¼ tsp cayenne pepper (optional)
1 tbsp finely chopped chives
Salt and pepper to taste
Coating:
¾ cup roasted almonds (chopped)
2 tbsp chopped parsley (optional)
Soften the Cream Cheese: Let it sit at room temp for 30–45 mins or microwave in short bursts.
Mix: In a bowl, combine all cheese and base ingredients plus seasonings. Stir until smooth.
Shape: Place on plastic wrap, form into a ball, wrap, and chill for at least 1 hour.
Coat: Mix almonds and parsley on a plate. Roll the cheese ball in it until fully covered.
Serve: Pair with low-carb crackers, celery sticks, or cucumber slices.
Chill overnight for better flavor.
You can mix in smoked salmon, chopped pimentos, or use vegan cheese for variations.
