  • 2 cups mixed raw, unsalted nuts (almonds, pecans, walnuts, cashews)

  • 1 egg white

  • 1 tbsp olive oil or melted coconut oil

  • 1½ tsp cinnamon

  • ½ tsp ground ginger

  • ½ tsp smoked paprika

  • ¼ tsp cayenne pepper (optional)

  • ¼ tsp nutmeg

  • Pinch of ground cloves

  • 1½ tsp salt

  • 1½ tbsp monk fruit sweetener or erythritol

  • 1 tsp vanilla extract (optional)

Instructions

  1. Preheat oven to 325°F (160°C). Line a baking sheet with parchment paper.

  2. In a small bowl, mix all spices and sweetener.

  3. In a larger bowl, whisk egg white until frothy. Add mixed nuts and toss to coat.

  4. Add oil, spice mix, and vanilla. Mix until nuts are evenly coated.

  5. Spread nuts on the prepared tray in a single layer, keeping some clumps for clusters.

  6. Bake for 15–20 minutes, stirring once halfway. Watch edges closely to avoid burning.

  7. Let cool completely before breaking into clusters. Store in airtight container.

Notes

  • Swap nuts for whatever you have on hand—just keep it raw and unsalted.

  • If you prefer more heat, double the cayenne or add black pepper.

  • Let cool fully to get that crunchy cluster texture.
