Keto Spicy Jerk Chicken with Cauliflower Mash Recipe

Bold and spicy jerk chicken with creamy cauliflower mash made for the keto diet. A low-carb dinner that’s full of flavor, easy to make, and great for meal prep or weeknight meals.

For the Jerk Chicken

  • 4 chicken thighs (bone-in, skin-on)

  • 1 tablespoon olive oil

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • 1 teaspoon ground allspice

  • ½ teaspoon cinnamon

  • ¼ teaspoon nutmeg

  • 1 teaspoon smoked paprika

  • 1 teaspoon dried thyme

  • ½ teaspoon cayenne (adjust to taste)

  • 2 garlic cloves, crushed

  • 1 thumb-sized piece fresh ginger, grated

  • 1 tablespoon soy sauce or coconut aminos

  • Juice of 1 lime

  • 1 teaspoon erythritol or keto-friendly sweetener

For the Cauliflower Mash

  • 1 medium head cauliflower, chopped into florets

  • 2 tablespoons butter

  • ¼ cup heavy cream

  • ½ cup shredded cheddar or cream cheese

  • Salt and pepper to taste

Instructions

Make the marinade.
In a small bowl, mix the spices, garlic, ginger, lime juice, soy sauce, and sweetener.

2. Marinate the chicken.
Rub the marinade all over the chicken and let it sit for 2 hours or overnight in the fridge.

3. Cook the chicken.
Preheat oven to 400°F (200°C). Sear chicken in a hot pan with olive oil, skin side down, for 3–4 minutes each side. Then bake for 20–25 minutes until fully cooked.

4. Make the mash.
Boil cauliflower until soft, drain well, and press out extra water. Blend with butter, cream, cheese, salt and pepper until smooth.

5. Serve.
Plate the mash and top with the spicy chicken. Add chopped herbs if you want.

Notes

To lower the heat, cut back on the cayenne. The mash works with cream cheese or cheddar. Store leftovers in the fridge for up to 4 days.
