This Keto Spicy Sausage Lasagna Soup brings all the comfort of lasagna without the carbs. It’s thick, creamy, full of spicy sausage, melted cheese, and rich tomato flavor. Perfect for a quick dinner or meal prep.

  • 1 lb spicy Italian sausage (casings removed if using links)

  • 1 tbsp olive oil

  • ½ medium onion, chopped

  • 4 garlic cloves, minced

  • 1 red bell pepper, diced (optional)

  • 3 cups beef or chicken broth (low sodium)

  • 1 (14 oz) can diced tomatoes

  • 1 (8 oz) can tomato sauce

  • 2 tbsp tomato paste

  • 1 tsp crushed red pepper flakes (adjust to taste)

  • 1 tsp Italian seasoning

  • ½ tsp paprika

  • ½ tsp salt (to taste)

  • ¼ tsp black pepper

  • ½ cup ricotta cheese

  • ½ cup shredded mozzarella cheese

  • ¼ cup grated Parmesan cheese

  • 1 tbsp chopped basil or parsley (for garnish)

  • Optional: 1 cup chopped zucchini or cauliflower rice

  • Optional: 2 tbsp heavy cream for extra richness

Instructions

  1. Heat a large pot over medium heat. Add olive oil and sausage. Break it apart and cook until browned, about 7–10 minutes. Drain extra grease if needed.

  2. Add chopped onion, garlic, and red bell pepper. Stir and cook for 3–4 minutes until soft.

  3. Stir in diced tomatoes, tomato sauce, and tomato paste.

  4. Pour in broth. Add Italian seasoning, red pepper flakes, paprika, salt, and pepper. Mix well.

  5. Bring to a gentle boil, then lower heat and simmer uncovered for 15–20 minutes.

  6. If using zucchini or cauliflower rice, add now and cook another 5–7 minutes until tender.

  7. Stir in heavy cream if desired. Taste and adjust seasoning.

  8. In a small bowl, mix ricotta, mozzarella, and Parmesan.

  9. Ladle soup into bowls. Add a spoonful of the cheese mixture on top of each serving. Garnish with basil or parsley.

Notes

  • For a milder version, use half mild and half spicy sausage.

  • Don’t add cheese directly to the pot — top bowls individually to avoid curdling.

  • The soup thickens as it cools; add a little broth when reheating.

  • Great for freezing. Store without cheese topping for best texture.
