  • ½ cup lump crab meat (real crab, not imitation)
  • 1 tbsp butter
  • ½ tsp Old Bay seasoning
  • 1 tsp lemon juice
  • Pinch of salt

For the Asparagus:

  • 810 asparagus spears
  • 1 tbsp butter
  • Pinch of salt

For the Hollandaise Sauce:

  • 3 egg yolks
  • ½ cup unsalted butter, melted
  • 1 tbsp lemon juice
  • ½ tsp Dijon mustard (optional)
  • Pinch of salt
  • A dash of cayenne pepper (optional)

Instructions

  • Prep the Ingredients – Let steaks sit at room temperature for 30 minutes. Trim asparagus and set up a double boiler for hollandaise sauce.
  • Cook the Steak – Heat 1 tbsp oil in a skillet over high heat. Sear steaks for 3-4 minutes per side. Add 2 tbsp butter and garlic, then spoon butter over the steaks for 2 minutes. Cook to desired doneness. Let rest.
  • Cook the Asparagus – In the same pan, melt 1 tbsp butter, add asparagus, and cook for 3-4 minutes until tender. Remove from heat.
  • Prepare the Crab Topping – Melt 1 tbsp butter in a small pan over medium heat. Add crab meat, Old Bay, lemon juice, and salt. Sauté for 2-3 minutes. Set aside.
  • Make the Hollandaise Sauce – In a heatproof bowl over simmering water, whisk egg yolks, lemon juice, mustard, and salt. Slowly add melted butter while whisking until thick and smooth. Remove from heat and add cayenne if desired.
  • Assemble the Dish – Place steaks on plates, top with crab, arrange asparagus on the side, and drizzle with hollandaise sauce. Serve immediately!
