These keto-friendly Cream Cheese Stuffed Mini Peppers are perfect as snacks, appetizers, or quick low-carb meals. You can bake, grill, or air fry them. They’re easy to prep, full of flavor, and made with simple ingredients like cream cheese, shredded cheese, and sweet mini peppers. Great for meal prep, game day, or healthy dinner sides.

Ingredients

  • 15–20 Mini Sweet Peppers

  • 8 oz cream cheese (softened)

  • 1 cup shredded cheddar or mozzarella

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • Salt and pepper to taste

Optional Add-ins:

  • 1/2 cup cooked shredded chicken (for Cream Cheese Chicken Stuffed Peppers)

  • 1/2 cup cooked ground sausage (for Sausage Stuffed Mini Peppers)

  • Chopped jalapeños, bacon bits, green onions

Instructions

  1. Preheat oven to 375°F (or air fryer to 350°F).

  2. Wash Mini Peppers, cut in half lengthwise, remove seeds and ribs.

  3. In a bowl, mix cream cheese, shredded cheese, garlic powder, onion powder, salt, and pepper.

  4. Add in meat or mix-ins if using.

  5. Spoon or pipe the mixture into pepper halves.

  6. Bake for 15–20 minutes, or air fry for 8–10 minutes until cheese is bubbly.

  7. Serve warm or at room temperature.

Notes

  • Store leftovers in the fridge up to 4 days.
