For the Meatballs:
1 lb ground beef (80/20)
1/2 lb ground pork
1/2 small onion, finely chopped
2 cloves garlic, minced
1/4 cup almond flour
1 large egg
1/4 cup heavy cream
1 tsp salt
1/2 tsp black pepper
1/4 tsp allspice
1/4 tsp nutmeg
2 tbsp butter (for frying)
For the Sauce:
2 cups beef broth
1/2 cup heavy cream
2 tbsp sour cream
1 tsp Dijon mustard
Salt and pepper to taste
1/4 tsp xanthan gum (optional)
In a large bowl, mix together the ground beef, ground pork, onion, garlic, almond flour, egg, heavy cream, salt, pepper, allspice, and nutmeg until just combined.
Roll the mixture into 1 to 1.5 tablespoon-sized meatballs.
Heat butter in a large skillet over medium heat. Brown the meatballs on all sides. Set aside once browned.
In the same skillet, pour in beef broth and scrape the bottom. Stir in heavy cream, sour cream, Dijon mustard, salt, pepper, and xanthan gum if using.
Return meatballs to the pan and simmer on low heat for 10–12 minutes, or until cooked through and sauce thickens.
Serve hot with your favorite keto sides.
Wet your hands slightly when rolling meatballs to prevent sticking.
Crushed pork rinds can be used instead of almond flour for a crunchier bite.
Sauce can be thickened naturally by simmering longer if xanthan gum is not available.
