For the Meatballs:

  • 1 lb ground beef (80/20)

  • 1/2 lb ground pork

  • 1/2 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1/4 cup almond flour

  • 1 large egg

  • 1/4 cup heavy cream

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1/4 tsp allspice

  • 1/4 tsp nutmeg

  • 2 tbsp butter (for frying)

For the Sauce:

  • 2 cups beef broth

  • 1/2 cup heavy cream

  • 2 tbsp sour cream

  • 1 tsp Dijon mustard

  • Salt and pepper to taste

  • 1/4 tsp xanthan gum (optional)

Instructions

  • In a large bowl, mix together the ground beef, ground pork, onion, garlic, almond flour, egg, heavy cream, salt, pepper, allspice, and nutmeg until just combined.

  • Roll the mixture into 1 to 1.5 tablespoon-sized meatballs.

  • Heat butter in a large skillet over medium heat. Brown the meatballs on all sides. Set aside once browned.

  • In the same skillet, pour in beef broth and scrape the bottom. Stir in heavy cream, sour cream, Dijon mustard, salt, pepper, and xanthan gum if using.

  • Return meatballs to the pan and simmer on low heat for 10–12 minutes, or until cooked through and sauce thickens.

  • Serve hot with your favorite keto sides.

Notes

  • Wet your hands slightly when rolling meatballs to prevent sticking.

  • Crushed pork rinds can be used instead of almond flour for a crunchier bite.

  • Sauce can be thickened naturally by simmering longer if xanthan gum is not available.

  • Great for meal prep and freezer-friendly.
