Ingredients

Scale

For the dough:

  • 1 cup almond flour

  • 1 tbsp coconut flour

  • 1 tbsp psyllium husk powder

  • 1/4 tsp salt

  • 1/2 tsp baking powder

  • 1 egg (room temperature)

  • 1 tbsp olive oil

  • 1/2 cup warm water

For topping:

  • 2 tbsp Za’atar

  • 1 tbsp olive oil

  • Sea salt to taste

Instructions

  1. Preheat oven to 375°F (190°C).

  2. In a bowl, mix almond flour, coconut flour, psyllium husk powder, salt, and baking powder.

  3. Add egg and olive oil. Mix until crumbly.

  4. Slowly pour in warm water and stir until dough forms. Let it rest for 2 minutes.

  5. Flatten dough between two parchment sheets to 1/4 inch thick.

  6. Transfer to baking sheet with bottom parchment.

  7. Mix Za’atar with olive oil and brush on dough. Sprinkle sea salt on top.

  8. Bake 18–22 minutes until edges are golden and top is lightly browned.

  9. Cool for 5 minutes before serving.

Notes

Use psyllium husk powder for best texture. Don’t skip Za’atar—it brings the flavor. Great with dips, grilled meats, or labneh. Store in fridge for 4 days or freeze with parchment between pieces.
