2 to 2.5 lb pork loin
3 limes (zest and juice)
4 garlic cloves, minced
1 tsp chili powder
1 tsp ground cumin
1 tsp smoked paprika
½ tsp salt
½ tsp black pepper
¼ cup olive oil
Pinch of cayenne pepper (optional)

Marinate Pork
Dry pork loin with a paper towel.
In a bowl, mix lime juice, zest, garlic, spices, salt, pepper, and olive oil.
Coat pork in marinade, seal in a container or zip bag. Chill for at least 2 hours, overnight if possible.
Prep Oven
Preheat oven to 375°F (190°C).
Remove pork from fridge and let sit at room temp for 30 mins.
Roast
Place pork in a baking dish. Pour marinade on top.
Roast uncovered for 45–60 mins, or until internal temp hits 145°F (63°C).
Let rest 10 mins before slicing.
Serve
Slice and serve with lime wedges, herbs, or avocado if using.
