Keto Zucchini Breadsticks Recipe

Soft and cheesy breadsticks made from zucchini instead of wheat. Low carb and great for the keto diet. Easy to bake and perfect for dipping in marinara or serving as a snack.

Ingredients

2 medium zucchinis
1 egg
1 cup shredded mozzarella cheese
1 cup shredded parmesan cheese
1 teaspoon garlic powder
1 teaspoon Italian seasoning
Salt to taste
Low-carb marinara sauce for dipping (optional)

Instructions

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

  • Grate zucchini. Squeeze out as much water as possible using a clean towel.

  • Add zucchini, egg, ½ cup mozzarella, ½ cup parmesan, garlic powder, Italian seasoning, and salt into a bowl. Mix well.

  • Spread the mixture into a flat rectangle on the baking sheet. Keep the layer even.

  • Bake 20 minutes until the edges look slightly golden.

  • Sprinkle the rest of the mozzarella and parmesan on top.

  • Bake again for 8 to 10 minutes until cheese melts and bubbles.

  • Cool for a few minutes. Slice into strips. Serve warm with marinara sauce if you want.

Notes

Squeeze zucchini very well to avoid soggy breadsticks.
A pizza cutter makes slicing easier.
Air fryer option: 375°F for 8 to 10 minutes. Add cheese and cook 3 more minutes.
