This quinoa fruit salad mixes mango, kiwi, raspberries, blackberries, lime, honey, and cooked quinoa into one bright cold bowl. It tastes fresh and juicy, but the quinoa gives it enough substance to feel like more than just fruit.

Ingredients

  • 3 oz mango
  • 1 kiwi
  • 1/4 cup cooked quinoa
  • 1/2 cup raspberries
  • 1/2 cup blackberries
  • 1 tbsp lime juice
  • 1 tsp honey

Instructions

1. Cut the mango into bite-size pieces.
2. Slice the kiwi and cut it into smaller pieces.
3. Add the mango and kiwi to a bowl.
4. Add the cooked quinoa.
5. Add the raspberries and blackberries.
6. Pour in the lime juice and honey.
7. Toss gently to combine.
8. Plate and serve cold.

Notes

  • Loosen the cooked quinoa before adding it so it mixes through the fruit easily.
  • Toss gently after the berries go in.
  • This salad is best soon after mixing.
