1.5 lbs raw shrimp, peeled and deveined
4 cups broccoli florets
3 tbsp olive oil (or melted butter)
3 garlic cloves, minced
1 lemon (zest + juice)
1 tsp Italian seasoning
½ tsp salt, or to taste
¼ tsp black pepper
¼ tsp red pepper flakes (optional)
½ tsp smoked paprika (optional)
1 tbsp honey (optional, balances acidity)
2 tbsp grated Parmesan or chopped parsley for garnish
Preheat: Oven to 425°F (220°C) or grill to medium-high heat.
Prep foil: Tear 4 large sheets of heavy-duty aluminum foil (about 12×14 inches).
Mix: In a large bowl, toss shrimp and broccoli with olive oil, garlic, lemon zest and juice, salt, pepper, and seasonings.
Assemble: Divide shrimp and broccoli evenly among the foil sheets.
Seal: Fold edges tightly to form packets, leaving space inside for steam.
Cook:
Oven: Place packets on a baking sheet and bake 15–18 minutes.
Grill: Cook packets directly on the grill for 12–15 minutes, turning once.
Serve: Carefully open foil (watch steam), garnish with parsley or Parmesan, and serve hot.
Substitute or add other veggies: bell peppers, zucchini, mushrooms, or onions.
Use heavy-duty foil to prevent tearing.
Shrimp cooks fast — remove once pink and slightly curled.
Store leftovers up to 3 days in an airtight container.
Works great for meal prep or camping foil dinners.
