This spinach salad with apple and feta brings together crisp apple, juicy blueberries, crumbled feta, and a quick mustard balsamic dressing.

It’s the kind of salad that tastes bright from the first bite and still feels filling enough for lunch.

Ingredients

  • 1 ounce spinach
  • 1 small organic apple, chopped
  • 1/4 cup blueberries
  • 1 ounce feta cheese
  • 1 tablespoon walnut
  • 1 small garlic clove
  • 1 teaspoon lemon juice
  • 1 teaspoon extra virgin olive oil
  • 1/4 teaspoon Dijon mustard
  • 1/4 teaspoon balsamic vinegar
  • Salt and black pepper, to taste

Instructions

  1. Add the spinach to a medium bowl.
  2. Add the chopped apple, blueberries, feta, and walnut.
  3. In a small bowl, combine the garlic, lemon juice, olive oil, Dijon mustard, and balsamic vinegar.
  4. Season the dressing with salt and black pepper.
  5. Whisk until blended.
  6. Pour the dressing over the salad and toss.
  7. Plate and serve right away.

Notes

  • Whisk the dressing well so the mustard and balsamic blend fully.
  • Serve soon after tossing for the freshest apple texture.
  • Keep the apple pieces small so they mix through the salad evenly.
