This tuna corn salad is a quick lunch with tomato, green bell pepper, cilantro, and feta in a light lemon dressing. It is bright, filling, and easy to make.

Ingredients

1/4 red onion
– 1/4 green bell pepper
– 3 cherry tomatoes
– 3.5 oz tuna
– 1/4 cup corn
– 1 tsp cilantro
– 1 tsp olive oil
– 1 tsp lemon juice
– Salt and pepper
– 1 oz feta cheese

Instructions

1. Slice the red onion, chop the green bell pepper, and cut the cherry tomatoes.
2. Add the onion, bell pepper, tomatoes, tuna, corn, and cilantro to a bowl.
3. Stir the olive oil, lemon juice, and salt and pepper in a small bowl.
4. Pour the dressing over the salad and add the feta.
5. Toss gently and serve.

Notes
