Avocado Burger With Smoked Salmon and Egg

This avocado burger uses avocado halves as the bun with smoked salmon, lettuce, Greek yogurt, and a fried egg. It is rich, fresh, low carb, and ready fast.

Ingredients

  • 1 ripe avocado
  • 1/8 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 1 teaspoon Greek yogurt
  • 1 small lettuce leaf
  • 1 ounce smoked salmon
  • 1 egg
  • 1 teaspoon black sesame seeds

Instructions

1. Cut the avocado in half around the pit and twist the halves apart.
2. Remove the pit and peel both avocado halves carefully.
3. Slice a thin piece from the bottom of one avocado half so it sits flat.
4. Season the avocado with salt and black pepper.
5. Spoon Greek yogurt into the hollow of the bottom avocado half.
6. Add lettuce, then layer smoked salmon over the lettuce.
7. Fry the egg in a nonstick pan until the white is set and the yolk is still runny.
8. Place the fried egg over the smoked salmon.
9. Top with the second avocado half.
10. Sprinkle with black sesame seeds and serve right away.

Notes

  • Use an avocado that is ripe but still firm enough to hold its shape.
  • Serve with a fork and knife for the cleanest bite.
  • Cook the egg longer if you prefer a firmer yolk.
