Keto Bacon Ranch Chicken Hobo Dinner

A simple, mess-free foil pack recipe perfect for the keto diet. Juicy chicken, crispy bacon, cheesy ranch seasoning, and low-carb veggies come together for a flavorful low-carb dinner that’s easy to make and clean up!

Ingredients

  • 4 boneless, skinless chicken breasts or thighs
  • 8 slices thick-cut bacon
  • 1 packet ranch seasoning (or homemade, see notes)
  • 1 cup shredded cheddar cheese
  • 2 cups low-carb veggies (zucchini, broccoli, cauliflower, etc.)
  • 4 tbsp butter
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (or heat your grill).
  2. Slice veggies into bite-sized pieces and toss them with olive oil, garlic powder, onion powder, salt, and pepper.
  3. Lay out 4 sheets of heavy-duty aluminum foil.
  4. Place a chicken breast in the center of each foil sheet and sprinkle generously with ranch seasoning.
  5. Add seasoned veggies around the chicken and top with 2 slices of bacon per pack.
  6. Sprinkle shredded cheddar cheese over the top and add a pat of butter to each packet.
  7. Seal the foil packs tightly, leaving a little space inside for air to circulate.
  8. Bake or grill for 25-30 minutes until the chicken reaches an internal temperature of 165°F.
  9. Carefully open the foil packs (watch for steam) and serve hot.

Notes

  • For a homemade ranch seasoning, mix: 2 tbsp dried parsley, 1 tbsp garlic powder, 1 tbsp onion powder, 1 tsp dried dill, 1 tsp dried chives, ½ tsp salt, and ½ tsp black pepper.
  • You can substitute chicken thighs for breasts for extra juiciness.
  • This recipe works great in an air fryer—cook at 375°F for 20-25 minutes.
