1.5 lbs monkfish fillets (membrane removed)
2 tbsp olive oil
4 tbsp unsalted butter, melted
3 garlic cloves, minced
1 lemon, zested and juiced
1 tsp smoked paprika
½ tsp ground black pepper
½ tsp sea salt
1 tbsp fresh parsley, chopped
Optional: Pinch of red pepper flakes
Instructions
Preheat Oven: Heat oven to 375°F (190°C) and line a baking dish with parchment paper.
Prepare Monkfish: Pat fillets dry, coat with olive oil, and season with salt, pepper, and smoked paprika.
Make Garlic Butter Sauce: Mix melted butter, minced garlic, lemon zest, and half the parsley in a bowl.
Bake the Fish: Place fillets in the dish, drizzle with garlic butter sauce, and bake for 20-25 minutes, or until opaque and flaky.
Optional Broil: Broil for 2-3 minutes to brown the top.
Serve: Garnish with parsley and a squeeze of lemon juice before serving.
