This low-carb berry and vanilla Jello ring is a light and refreshing dessert, perfect for Valentine’s Day or any special occasion. It’s keto-friendly, easy to make, and combines fruity berry flavors with a creamy vanilla layer.

For the Berry Layer:

  • 2 packs sugar-free berry-flavored gelatin
  • 2 cups boiling water
  • 1 ½ cups cold water
  • 1 cup fresh or frozen mixed berries

For the Vanilla Layer:

  • 1 pack sugar-free vanilla pudding mix
  • 1 ½ cups unsweetened almond milk
  • 1 cup heavy cream, whipped

Optional Garnish:

  • Fresh berries
  • Whipped cream (sugar-free)
  • Unsweetened shredded coconut

Instructions

  • Prepare the Berry Layer:
    • Dissolve 2 packs of berry-flavored gelatin in 2 cups of boiling water. Stir until fully dissolved.
    • Add 1 ½ cups of cold water and mix well. Let cool for 10 minutes.
    • Pour into a Jello mold or bundt pan. Add fresh or frozen berries evenly into the mixture.
    • Chill in the refrigerator for 1 ½ to 2 hours or until firm.
  • Prepare the Vanilla Layer:
    • Whisk the vanilla pudding mix with almond milk until thickened (about 2-3 minutes).
    • Gently fold in the whipped heavy cream until smooth.
    • Spoon the vanilla mixture over the set berry layer and spread evenly.
    • Chill for another 1-2 hours until firm.
  • Unmold and Garnish:
    • Dip the mold in warm water for 10 seconds to loosen. Invert onto a serving plate.
    • Garnish with fresh berries, whipped cream, or shredded coconut if desired.

Notes

  • Use a silicone mold for easy release.
  • Make sure each layer is completely set before adding the next to keep the layers separate.
  • Store leftovers covered in the fridge for up to 3-4 days.
