Keto BLT Egglets for Valentine’s Day

A fun and easy keto BLT recipe made with crispy bacon, fresh lettuce, juicy tomatoes, and creamy mayo stuffed inside hard-boiled eggs. This low-carb snack is perfect for breakfast, brunch, or a cute appetizer for Valentine’s Day. Quick to make, keto-friendly, and full of flavor!

  • 6 large eggs
  • 6 slices crispy bacon
  • 6 cherry tomatoes (or 1 large tomato, diced)
  • 2 tbsp mayonnaise (or keto-friendly avocado mayo)
  • ¼ tsp garlic powder
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 1 tsp lemon juice (optional)
  • A handful of fresh lettuce leaves (butter lettuce or romaine)
  • Toothpicks (to hold everything together)

Instructions

Boil the Eggs – Place eggs in a pot, cover with water, and bring to a boil. Turn off heat, cover, and let sit for 10–12 minutes. Transfer to an ice bath, then peel.

Cook the Bacon – Fry in a skillet over medium heat until crispy, or bake at 400°F (200°C) for 12–15 minutes. Drain on paper towels.

Prep the Filling – Chop tomatoes, shred lettuce, and mix mayo, garlic powder, salt, black pepper, and lemon juice in a small bowl.

Assemble the Egglets – Slice each egg horizontally in half. Spread mayo on the bottom half, then add lettuce, tomato, and bacon. Place the top half back on and secure with a toothpick.

Serve & Enjoy – Plate and serve fresh, or store in the fridge for up to 24 hours.

Notes

  • For extra crunch, use turkey bacon or pancetta instead of regular bacon.
  • Add avocado slices for more healthy fats.
  • A pinch of cayenne pepper in the mayo makes it spicy!
  • Make heart-shaped bacon by twisting it before cooking.
