Keto Blueberry Banana Bread Recipe

A soft, low-carb blueberry banana bread made with almond flour, no refined sugar, and packed with juicy blueberries. Gluten free, keto diet friendly, and perfect for easy summer meals or healthy blueberry breakfast cake cravings.

  • 2 cups almond flour

  • 1/4 cup coconut flour

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • Pinch of salt

  • 1/2 tsp cinnamon (optional)

  • 3 large eggs

  • 1 ripe banana, mashed

  • 1/4 cup melted coconut oil (or butter)

  • 1/4 cup unsweetened almond milk

  • 1 tsp vanilla extract

  • 2 tbsp honey or sugar-free syrup

  • 1 cup blueberries (fresh or frozen)

  • Optional: 2 tbsp flax meal or chia seeds

Instructions

  1. Preheat oven to 350°F (175°C). Line a loaf pan with parchment or grease it.

  2. In a large bowl, mix almond flour, coconut flour, baking powder, baking soda, cinnamon, and salt.

  3. In another bowl, mash the banana and whisk in eggs, oil, almond milk, vanilla, and honey/syrup.

  4. Combine wet ingredients with dry, stirring until just mixed.

  5. Toss blueberries with a bit of almond flour and fold them into the batter.

  6. Pour into the loaf pan and smooth the top.

  7. Bake for 45–50 minutes until a toothpick comes out clean.

  8. Cool at least 15 minutes before slicing.

Notes

  • Sub honey for monk fruit to make it sugar-free.

  • To make muffins, bake in lined muffin tins for 18–22 minutes.
