Ingredients

Scale
  • 1 ½ cups almond flour
  • ¼ cup coconut flour
  • 2 tbsp psyllium husk powder
  • 2 tsp baking powder
  • ¼ tsp salt
  • 1 tsp apple cider vinegar
  • 2 eggs (room temperature)
  • 2 tbsp butter (melted) or coconut oil
  • 1 cup hot water (not boiling)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking tray with parchment paper.
  2. In a large bowl, whisk together the almond flour, coconut flour, psyllium husk, baking powder, and salt.
  3. Add the apple cider vinegar, eggs, and melted butter (or coconut oil) to the dry ingredients. Stir well.
  4. Gradually add the hot water and mix until the dough forms. Let it sit for a minute to thicken.
  5. Divide the dough into 6-8 portions and shape into rolls. Place on the baking tray.
  6. Bake for 25-30 minutes or until the rolls are golden brown. Let them cool slightly before serving.

Notes

  • For a dairy-free option, use coconut oil instead of butter.
  • Add herbs like rosemary or thyme for extra flavor.
  • Rolls can be stored in the fridge for up to 5 days or frozen for up to 3 months.
