Ingredients

  • 4 cups broccoli, chopped small

  • 6 slices bacon, cooked and crumbled

  • 1/2 small red onion, finely chopped

  • 1/2 cup shredded cheddar cheese

  • 1/4 cup sunflower seeds

  • 1 small green apple, finely chopped (optional for strict keto)

  • 1/2 cup mayonnaise

  • 2 tbsp apple cider vinegar

  • 1 tbsp mustard (Dijon or yellow)

  • 1 tbsp powdered sweetener (erythritol or monk fruit)

  • Salt and pepper to taste

Instructions

  • Chop the broccoli into small, bite-sized pieces, including peeled stems.

  • Cook bacon until crisp, then crumble.

  • In a large bowl, combine broccoli, bacon, onion, apple, cheese, and sunflower seeds.

  • In a smaller bowl, mix mayo, vinegar, mustard, sweetener, salt, and pepper until smooth.

  • Pour dressing over salad and stir well to coat.

  • Chill in the fridge for at least 1 hour for best flavor.

  • Letting it sit in the fridge helps the flavors blend and the dressing soak into the broccoli.
