For the Dough:

  • 2 cups almond flour
  • 2 tablespoons coconut flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cardamom
  • ¼ teaspoon salt
  • 1 ½ cups shredded mozzarella cheese
  • 2 tablespoons cream cheese
  • 1 large egg

For the Cinnamon-Cardamom Coating:

  • 3 tablespoons granulated monk fruit sweetener (or erythritol)
  • 1 tablespoon ground cinnamon
  • ½ teaspoon ground cardamom
  • 2 tablespoons butter, melted

Instructions

  1. Preheat Oven – Set oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix Dry Ingredients – In a bowl, whisk together almond flour, coconut flour, baking powder, cardamom, and salt.
  3. Melt Cheese – Microwave mozzarella and cream cheese for 30 seconds, stir, and microwave again until smooth.
  4. Make the Dough – Add the melted cheese to the dry ingredients, then mix in the egg. Knead until a smooth dough forms.
  5. Roll & Cut – Roll the dough into a ¼-inch thick rectangle and cut into ½-inch wide strips.
  6. Twist the Dough – Take each strip and twist both ends in opposite directions. Place on a baking sheet.
  7. Brush & Coat – Brush twists with melted butter and sprinkle with the cinnamon-cardamom sweetener mix.
  8. Bake – Bake for 12-15 minutes or until golden brown. Let cool for 5 minutes before serving.

Notes

  • If the dough is too sticky, chill it for 5 minutes before rolling.
  • For extra crunch, add chopped nuts to the coating.
  • Store in an airtight container at room temperature for 2-3 days or refrigerate for a week.
