These Keto Christmas Tree Pizza Bites are a festive and delicious low-carb snack perfect for holiday gatherings. Made with a keto-friendly puff pastry, pizza sauce, cheese, and your favorite toppings, they’re fun to make and great for sharing.

For the Keto Puff Pastry:

  • 1 ½ cups almond flour
  • ¼ cup coconut flour
  • ½ tsp xanthan gum
  • 1 ½ cups shredded mozzarella cheese
  • 2 tbsp cream cheese
  • 1 large egg

For the Filling:

  • ½ cup sugar-free pizza sauce
  • 1 cup shredded mozzarella cheese
  • Toppings of your choice (mini pepperoni, chopped bell peppers, olives, etc.)

To Decorate:

  • Fresh parsley or basil leaves
  • Grated Parmesan

Instructions

  • Preheat oven to 375°F (190°C).
  • Melt the shredded mozzarella and cream cheese in the microwave until gooey.
  • Mix almond flour, coconut flour, and xanthan gum in a bowl. Add the melted cheese and egg, and knead until smooth.
  • Roll out the dough between two sheets of parchment paper into a thin sheet.
  • Cut the dough into a large triangle (tree shape) and place on a parchment-lined baking tray.
  • Spread pizza sauce over the triangle, leaving a small border. Sprinkle cheese and toppings evenly.
  • Slice horizontal strips along the sides of the triangle to create branches, leaving 1 inch in the middle. Twist each strip.
  • Brush with beaten egg for a golden finish.
  • Bake for 15-20 minutes until golden and bubbly.
  • Cool slightly, then decorate with parsley and Parmesan. Serve warm.

Notes

  • Don’t overload the pizza sauce or toppings to keep the dough from becoming soggy.
  • Leftovers can be stored in the fridge for 3 days or frozen for up to 1 month.
