  • 1 tbsp Worcestershire sauce (sugar-free)
  • 1/4 tsp xanthan gum (optional, for thickening)
  • 1 cup grated Gruyère or mozzarella cheese
  • Keto bread slices or cheese crisps for topping

Instructions

  1. Caramelize the Onions: In a large pot, melt the butter over medium heat. Add sliced onions and cook slowly, stirring occasionally, for 30-40 minutes until deeply caramelized and golden brown.
  2. Deglaze: Add the white wine (or a bit of broth) and scrape the pot to lift up the browned bits. Simmer until the liquid mostly evaporates, about 5-7 minutes.
  3. Simmer the Soup: Pour in the beef broth, Worcestershire sauce, salt, and pepper. Simmer for 20-25 minutes, allowing flavors to blend. For a thicker consistency, whisk in the xanthan gum at this point.
  4. Prepare Toppings: Toast keto-friendly bread slices or bake cheese crisps at 350°F for 5-7 minutes until crispy.
