Ingredients

Scale

For the Lobster Filling:

  • 1 lb lobster meat, cooked and chopped
  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 tablespoon lemon juice
  • 2 tablespoons celery, finely chopped
  • Salt and pepper to taste
  • Optional: Fresh chives or parsley for garnish

For the Keto Breading:

  • 2 cups almond flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • 1/4 cup sour cream
  • 1/2 teaspoon xanthan gum (optional)
  • 1 teaspoon garlic powder (optional)

Instructions

Step 1: Prepare the Lobster Filling

  1. Cook the lobster meat if needed, then chop it into bite-sized pieces.
  2. In a mixing bowl, combine mayonnaise, Dijon mustard, lemon juice, salt, and pepper. Mix until smooth.
  3. Toss the lobster and celery in the dressing, coating evenly. Refrigerate while you make the breading.

Step 2: Make the Keto Breading

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together almond flour, baking powder, salt, and xanthan gum.
  3. In a separate bowl, beat the eggs, then mix in melted butter and sour cream.
  4. Combine wet and dry ingredients, mixing until a dough forms.
  5. Shape into rolls and bake for 15–18 minutes until golden brown. Let cool before slicing.

Step 3: Assemble the Lobster Rolls

  1. Slice the rolls lengthwise, careful not to cut through completely. Toast in a buttered skillet if desired.
  2. Fill each roll with the chilled lobster mixture. Garnish with herbs if desired. Serve immediately!

Notes

  • Use fresh lobster meat for the best flavor, but frozen works in a pinch.
  • The rolls can be baked ahead of time and stored in an airtight container.
  • For an even lower-carb option, skip the bread and serve the filling in lettuce wraps.
