  • Cheesecake Base:
    • 8 oz cream cheese (softened)
    • 1/4 cup unsalted butter (softened)
    • 1/3 cup powdered erythritol
    • 1 tsp vanilla extract
  • Raspberry Swirl:
    • 1/2 cup fresh raspberries (or thawed frozen)
    • 2 tbsp powdered erythritol
    • 1 tsp lemon juice (optional)
  • Optional Toppings:
    • Keto-friendly chocolate drizzle
    • Crushed nuts
    • Unsweetened shredded coconut

Instructions

  • Prepare the Raspberry Swirl
    • Heat raspberries, erythritol, and lemon juice in a small saucepan over medium heat.
    • Stir and mash until the mixture thickens (about 5-7 minutes). Let cool.
  • Make the Cheesecake Filling
    • In a bowl, mix softened cream cheese and butter until smooth and fluffy.
    • Add powdered erythritol and vanilla extract. Mix until creamy.
  • Assemble
    • Spoon the cheesecake mixture into a silicone mold or mini muffin pan, filling each section three-quarters full.
    • Add a small dollop of raspberry swirl on top of each, then swirl with a toothpick for a marbled effect.
  • Chill to Set
    • Freeze for at least 2 hours until firm.
  • Optional Toppings
    • Once set, drizzle with chocolate, sprinkle with nuts, or add coconut if desired.
