  • ¼ cup coconut flour
  • ¼ cup sesame seeds (plus extra for sprinkling)
  • 4 large eggs
  • 1 tbsp baking powder
  • ¼ tsp salt
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • ¼ cup warm water

Instructions

  1. Toast the sesame seeds: Heat a dry skillet over medium heat and toast the sesame seeds for 2-3 minutes until golden brown. Set aside.
  2. Mix the dry ingredients: In a large bowl, combine almond flour, coconut flour, baking powder, salt, and toasted sesame seeds. Whisk well.
  3. Whisk the wet ingredients: In another bowl, beat the eggs. Add olive oil, apple cider vinegar, and warm water. Mix until well combined.
  4. Combine: Slowly pour the wet mixture into the dry ingredients. Stir until you get a thick, sticky batter. Let it rest for 5-10 minutes.
  5. Shape the dough: Line a loaf pan with parchment paper. Spoon the dough into the pan and smooth the top. Sprinkle extra sesame seeds on top.
  6. Bake: Preheat the oven to 350°F (175°C) and bake for 40-45 minutes or until a toothpick comes out clean.
  7. Cool completely: Let the bread cool fully before slicing to prevent it from crumbling.
