  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 2 tbsp tomato paste
  • 2 cups beef broth
  • 1 cup diced bell peppers (red, green, or yellow)
  • 2 cups cauliflower rice
  • 1 tbsp Worcestershire sauce
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Heat a large pot over medium-high heat and brown the ground beef. Drain excess grease.
  2. Add diced onion and minced garlic to the beef. Cook for 3-4 minutes, stirring frequently.
  3. Stir in tomato paste and cook for 1 minute, then add diced tomatoes, beef broth, Worcestershire sauce, paprika, and Italian seasoning. Stir well.
  4. Mix in diced bell peppers and cauliflower rice. Lower the heat to medium and let it simmer for 10-15 minutes until the vegetables are tender.
  5. Sprinkle shredded cheddar cheese over the top, cover, and let it melt for 2-3 minutes.
  6. Season with salt and pepper to taste. Serve warm.

  • For extra spice, add red pepper flakes or diced jalapeño.
  • Substitute ground beef with ground turkey or pork if preferred.
