Ingredients

Scale

For the squash:

  • 1 medium spaghetti squash (about 2.5 to 3 lbs)
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

For the Alfredo sauce:

  • 2 tablespoons unsalted butter
  • 3 garlic cloves, minced
  • 1 cup heavy cream
  • ¾ cup freshly grated Parmesan cheese
  • ¼ teaspoon nutmeg (optional)
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Drizzle the cut sides with olive oil and season with salt and pepper.
  4. Place the squash halves cut-side down on a baking sheet and roast for 35 to 45 minutes, until tender.
  5. While the squash is roasting, prepare the Alfredo sauce.
  6. In a saucepan over medium heat, melt the butter. Add the minced garlic and sauté for 1 to 2 minutes, until fragrant.
  7. Pour in the heavy cream and let it simmer gently for 5 minutes.
  8. Stir in the grated Parmesan cheese, a little at a time, until fully melted. Add nutmeg, salt, and pepper to taste.
  9. Remove the squash from the oven and let it cool for a few minutes. Using a fork, scrape the flesh to create spaghetti-like strands.
  10. Toss the squash strands with the Alfredo sauce until well coated.
  11. Serve warm, garnished with chopped parsley and extra Parmesan if desired.
