  • 2 tablespoons unsweetened tamarind pulp or concentrate
  • 3 cups cold water
  • 1/4 cup keto-friendly sweetener (erythritol, stevia, or monk fruit)
  • 1 cup ice
  • Optional: Pinch of salt, a squeeze of lime, or fresh mint for garnish

Instructions

  • Prepare Tamarind: Soak tamarind pulp in 1 cup of hot water for 10–15 minutes. Mash and strain the liquid to remove seeds and fibers. Skip this step if using tamarind concentrate.
  • Sweeten: Dissolve the keto sweetener in a little hot water to ensure it blends smoothly.
  • Mix: In a pitcher, combine the tamarind liquid or concentrate with cold water, dissolved sweetener, and a pinch of salt if using. Stir well.
  • Serve: Fill glasses with ice, pour in the tamarind mixture, and garnish with lime slices or mint if desired.
