  • 1 large avocado, sliced
  • 4 slices cheese (provolone, Swiss, or cheddar)
  • 4 tsp mayonnaise or cream cheese (optional)

For the Pesto:

  • 1 cup fresh basil leaves
  • ¼ cup olive oil
  • 2 tbsp parmesan cheese, grated
  • 1 clove garlic, minced
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp pine nuts (or walnuts)

Instructions

Step 1: Make the Pesto

  1. Add basil, garlic, parmesan, salt, pepper, and nuts to a food processor.
  2. Pulse a few times to break everything down.
  3. Slowly drizzle in olive oil while blending until smooth.

Step 2: Assemble the Wraps

  1. Lay a lettuce leaf on a clean surface.
  2. Spread 1 tsp of mayonnaise or cream cheese over the leaf.
  3. Place 2 slices of turkey on top.
  4. Add a slice of cheese.
  5. Arrange a few slices of avocado.
  6. Spoon about 1 tsp of pesto over everything.

Step 3: Roll & Serve

  1. Roll the wrap tightly like a burrito.
  2. Secure with a toothpick if needed.
  3. Serve immediately or wrap in parchment paper for later.

Notes

  • Use sturdy lettuce like butter or romaine for the best wraps.
  • Store in the fridge for up to 24 hours, wrapped tightly.
  • Swap turkey for chicken or ham if preferred.
  • Use store-bought pesto if short on time.
