This keto yeast bread is soft, fluffy, and tastes just like traditional bread! Perfect for anyone on a keto or low-carb diet. It’s great for sandwiches, toast, or as a side with any meal. Made with almond flour, coconut flour, and yeast, it rises beautifully and has a delicious flavor without all the carbs.

Ingredients

  • 2 cups almond flour
  • ½ cup coconut flour
  • 1 tbsp psyllium husk powder
  • 1 packet (2 ¼ tsp) active dry yeast
  • 1 tsp salt
  • 1 tsp xanthan gum
  • 1 tbsp sugar
  • ¾ cup warm water (around 100°F)
  • 3 large eggs
  • ¼ cup melted butter or olive oil

Instructions

  1. Activate the Yeast
    In a small bowl, mix warm water and sugar. Sprinkle the yeast on top, stir gently, and let it sit for 5–10 minutes until foamy.
  2. Mix Dry Ingredients
    In a large bowl, whisk together almond flour, coconut flour, psyllium husk powder, salt, and xanthan gum.
  3. Combine Wet and Dry Ingredients
    Add the foamy yeast mixture, eggs, and melted butter or oil to the bowl with the dry ingredients. Mix well until a sticky dough forms.
  4. Knead the Dough
    Turn the dough onto a clean surface and knead for 3–5 minutes. If it sticks, sprinkle a little almond flour on top.
  5. Let the Dough Rise
    Place the dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm spot for about 1 hour.
  6. Shape and Bake
    Preheat the oven to 375°F (190°C). Shape the dough into a loaf or rolls and place on a baking sheet or in a greased loaf pan. Bake for 35–40 minutes or until golden brown.

Notes

  • Be sure to use active dry yeast, not instant yeast.
  • The small amount of sugar is necessary for activating the yeast, but it won’t affect your carb count since the yeast consumes it.
  • Store leftovers in an airtight container at room temperature for up to 3 days or slice and freeze for longer storage.
