  • 4 medium zucchinis
  • 1 tablespoon olive oil
  • 1 pound ground beef or turkey
  • 2 garlic cloves, minced
  • 1 small onion, finely chopped
  • 1 cup sugar-free marinara sauce
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh parsley or basil for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Cut zucchinis in half lengthwise and scoop out the seeds to create boats. Brush with olive oil and season with salt and pepper. Place on a baking sheet.
  2. Heat a skillet over medium heat. Sauté garlic and onion until soft. Add ground beef or turkey and cook until browned. Stir in marinara sauce, Italian seasoning, salt, and pepper. Let simmer for 5–7 minutes.
  3. Spoon meat sauce into zucchini halves. Top with mozzarella and Parmesan.
  4. Bake for 20–25 minutes, until zucchinis are tender and cheese is bubbly. For a crispy cheese topping, broil for 2–3 minutes.
  5. Garnish with parsley or basil and serve.
