  • 4 large eggs, room temperature
  • ½ tsp vanilla extract
  • ½ tsp almond extract (optional)

  • ½ cup chopped almonds or walnuts, toasted
  • ½ cup sugar-free dried cranberries or unsweetened dried apricots
  • 2 tbsp sugar-free orange zest or candied peel
  • ½ cup sugar-free marzipan (homemade or store-bought)

Topping:

  • 2 tbsp butter, melted
  • 2 tbsp powdered erythritol

Instructions

  1. Preheat the oven to 325°F (160°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the almond flour, coconut flour, baking powder, xanthan gum, and salt.
  3. In another bowl, beat the butter and erythritol until light and fluffy. Add eggs one at a time, mixing well. Stir in vanilla and almond extracts.
  4. Gradually add the dry ingredients to the wet mixture, mixing until a dough forms.
  5. Fold in chopped nuts, dried fruit, and orange zest.
  6. Shape the dough into an oval, flatten slightly, and place the marzipan log down the center. Fold the dough over the marzipan and seal gently.
  7. Bake for 40-50 minutes, or until golden brown and firm.
  8. Brush the warm Stollen with melted butter and cool completely before dusting with powdered erythritol.
