This strawberry spinach salad mixes fresh berries, feta, onion, walnuts, and a quick balsamic honey dressing into one crisp lunch plate.

Its bright, crunchy, and easy to pull together when you want something fresh fast.

Ingredients

  • 3 oz spinach
  • 6 strawberries
  • 1/4 medium yellow onion
  • 1/2 oz feta cheese
  • 4 walnut halves
  • 1 tsp balsamic vinegar
  • 1 tsp olive oil
  • 1 tsp honey

Instructions

  1. Chop the spinach into bite-size pieces and place it on a plate or in a shallow bowl.
  2. Trim and dice the strawberries.
  3. Scatter the strawberries over the spinach.
  4. Thinly slice the yellow onion and add it over the top.
  5. Crumble the feta over the salad.
  6. Roughly chop the walnut halves and sprinkle them on top.
  7. Whisk the balsamic vinegar, olive oil, and honey in a small bowl.
  8. Drizzle the dressing over the salad and serve right away.

Notes

  • Keep the onion slices thin so they mix through the salad instead of sitting in big sharp bites.
  • Chop the walnuts right before serving if you want the crunch to stay a little louder.
