  • 12 large fresh scallops (dry, not wet-packed)
  • 6 slices of bacon (cut in half)
  • 1 tablespoon olive oil
  • ½ teaspoon garlic powder
  • Salt and pepper to taste
  • Toothpicks

Instructions

  1. Prep Ingredients: Pat scallops dry with a paper towel. Season both sides with salt, pepper, and garlic powder. Cut bacon slices in half.
  2. Wrap Scallops: Wrap one piece of bacon around each scallop and secure it with a toothpick.
  3. Preheat Skillet: Heat a large skillet over medium heat and add olive oil.
  4. Cook Scallops: Place scallops in the skillet, ensuring they don’t touch. Sear for 2–3 minutes per side until bacon is crispy and scallops are golden.
  5. Optional Oven Finish: If bacon isn’t crispy enough, transfer scallops to a baking sheet and bake at 400°F for 5 minutes.
  6. Serve: Remove toothpicks and serve hot. Garnish with parsley or lemon juice if desired.
