  • 2 cups almond flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 cup shredded sharp cheddar cheese
  • 12 jalapeños, finely diced (remove seeds for less heat)
  • 2 large eggs
  • ¼ cup melted butter
  • 1 tsp garlic powder (optional)
  • ¼ tsp black pepper (optional)

Instructions

  • Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • In a large bowl, mix almond flour, baking powder, salt, garlic powder, and black pepper.
  • Add the shredded cheddar and diced jalapeños to the dry mixture. Stir to combine.
  • In a separate bowl, lightly beat the eggs and mix in the melted butter.
  • Pour the wet mixture into the dry ingredients and stir until a thick dough forms.
  • Scoop out small portions of dough and shape them into 2-inch rounds. Place them on the lined baking sheet.
  • Bake for 18-20 minutes or until the tops are golden brown.
  • Let the biscuits cool for 5-10 minutes before serving.

Notes

  • For extra flavor, add chopped cooked bacon to the dough.
  • If you prefer less spice, remove the seeds from the jalapeños.
  • Store leftovers in an airtight container in the fridge for up to 5 days. Reheat in a 350°F (175°C) oven for 5-7 minutes.
