For the Doughnuts:

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup granulated erythritol
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 3 large eggs
  • 1/4 cup unsweetened almond milk
  • 1/4 cup melted butter (cooled)
  • 1 tsp vanilla extract
  • 1 tsp apple cider vinegar
  • Red food coloring

For the Cream Cheese Glaze:

  • 4 oz cream cheese (softened)
  • 1/4 cup powdered erythritol
  • 23 tbsp heavy cream
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease a doughnut pan.
  2. In a large bowl, mix almond flour, coconut flour, cocoa powder, erythritol, baking powder, baking soda, and salt.
  3. In another bowl, whisk eggs, almond milk, melted butter, vanilla, apple cider vinegar, and red food coloring.
  4. Combine wet and dry ingredients. Stir until smooth.
  5. Spoon or pipe batter into the doughnut pan, filling each about 2/3 full.
  6. Bake for 12-15 minutes. Let cool in the pan for 5 minutes, then transfer to a wire rack.
  7. Make the glaze by beating softened cream cheese with powdered erythritol, heavy cream, and vanilla until smooth.
  8. Dip cooled doughnuts in glaze, letting the excess drip off. Add optional toppings if desired.

Notes

  • Use gel food coloring for a vibrant red without thinning the batter.
  • Store doughnuts in the fridge for up to 5 days or freeze unglazed for up to 3 months.
