  • 4 keto-friendly tortillas
  • 1/2 lb sugar-free sausage (pork, turkey, or chicken)
  • 4 large eggs
  • 1/4 cup heavy cream or unsweetened almond milk
  • 1 tbsp butter
  • 1 cup shredded cheddar cheese (or mozzarella/Monterey Jack)
  • 1 avocado (optional)
  • 1/4 cup sour cream (optional)
  • Salsa or hot sauce (optional)
  • Salt and pepper to taste

Instructions

  1. Cook the sausage: In a pan over medium heat, cook the sausage until browned and cooked through. Remove from pan and set aside.
  2. Scramble the eggs: In a bowl, whisk together the eggs, heavy cream (or almond milk), and a pinch of salt and pepper. In the same pan, melt butter and scramble the eggs over medium-low heat until soft and creamy.
  3. Heat the tortillas: Warm the keto-friendly tortillas in a dry pan for about 30 seconds on each side.
  4. Assemble the tacos: Lay out the tortillas. Divide the scrambled eggs and sausage evenly between them. Top with shredded cheese, avocado, sour cream, and salsa if desired.
  5. Serve and enjoy: Serve immediately while warm, and add extra hot sauce if you like it spicy!

Notes

  • You can substitute the sausage with bacon, chorizo, or ground turkey.
