23 Light Summer Meals for When It’s Too Hot to Cook

It’s too hot to cook.

Like, genuinely too hot, and the thought of standing over a stove right now makes me want to lie down on the kitchen floor.

That’s pretty much how every summer goes around here.

The second it hits 90 outside, my whole appetite shifts.

I don’t want anything heavy, I don’t want anything that takes an hour, and I definitely don’t want to heat up the house doing it.

What I want is light summer meals.

Fresh stuff. Cold stuff.

Food that actually makes you feel better instead of weighing you down and making you sleepy at 7 pm.
